Fish and Chips, Tar Heel Style
This batter on this fried fish is light and thin. Using sweet potatoes instead of conventional white potatoes gives this British favorite a North Carolina twist, since the state is the nation’s top producer of sweet potatoes.
ALTERNATIVES: monkfish, grouper
Makes 6 servings
About 2 pounds sweet potatoes
1 1/2 teaspoons chili powder, divided
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1 1/2 teaspoons salt, divided
1/2 teaspoon black pepper
4 to 5 tablespoons olive oil
6 dogfish fillets (about 3 pounds)
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1 1/2 cups beer
Vegetable oil for frying
